Pablo Gimenez Melo has cooked throughout Latin America for over 20 years, but his love for wine and organically grown produce drew him to Northern California. Pablo was born in Santa Fe, Argentina riding horses and playing in fruit trees on his family's farm, where his sensual palate was informed by fresh flavors and aromas.

He learned classic European culinary skills from his French grandmother Julia, while his father taught him the Argentine Asado grilling tradition of the Río de la Plata. Vacations spent at family friends' vineyards in Mendoza and Salta further educated Pablo's palate in international wines. Pablo's deep connection to the natural world informs his flavor infusions that transform the California dining experience.

The first invitation-only dinner parties began in Buenos Aires in 2006, and expanded to Bogota, Colombia bringing together art, music, wine and food. Pablo's 'secret' dinner events grew to include San Francisco, California partnering with other chefs and sommeliers, with locations announced weekly online. His Dinner Parties and Dinner at Home, bring a professional restaurant experience to a more intimate setting.
